Although tough from exteriors, this delicate vegetable is filled with a unique group of antioxidants like betacyanin.  This pigment gives beet its unique colour and has several medical benefits as well like supporting liver, improving blood circulation and purifying blood.

Juice it for the sake of your heart

Health experts often advice, drink your veggies, eat your fruits. Add the beetroot to your juicer grinder long with other veggies like carrots, amla, tomatoes. That dark red juice is your elixir to health and glowing skin. Studies have shown beetroot juice can lower blood pressure, just an hour of drinking. Its regular intake can lower the risk of heart diseases and promote blood circulation. It is also a great detox drink.

If you love tikki or vegetarian kabab, make beetroot tikkis. Boil beetroot will potatoes and mash them with peas. Bind them with semolina or besan, add your spices, brown onion and form round tikkis. Swallow fry them under brown and crisp on both sides. You can even add them between buns with mayo and tomatoes for a healthy burger or just serve with coriander chutney.

Alia Bhatt has shared the recipe of beetroot salad on her YouTube channel. All you need is grated beetroot, hung curd, cumin seed, mustard seeds, curry leaves and chat masala. The recipe is very simple. Add grated beetroot over a bowl of hung curd and temper it with mustard seed, curry leaves cumin seeds. Add salt, pepper to taste and spice up with some chat masala. The salad workswonders in summer.

Beetroot soup when you are under the weather

Soups are so comforting and delicious. For a beetroot and coconut soup. Heat oil in apan, add onions, chillies ginger and chopped beetroot. Sauté everything for a few minutes, add water and let it simmer under the veggies are soft. Blend everything, add coconut milk and check for seasoning.
