DalBaafla

Dal Baafla is one of the most well-known dishes from Madhya Pradesh and it’s influenced by Rajasthani cuisine. 

DalBafla is a combination of dal (lentil) and baafla. For Dal mostly arhar dal is used and baafla is wheat balls cooked in ghee. Ghee provides extra richness, taste, and aroma to baafla. Dal Baafla is mostly served with coriander sauce (Green Chutney) Along with being tasty it is a good source of multi-vitamins, carbohydrates, proteins and fat in proper ratio. It is similar to littichokha of Bihar and dal bati of Rajasthan.

BhutteKaKees

Bhuttekakees is a tasty and healthy dish made from corn as the name suggests. It is an archetypal street food of Madhya Pradesh, and the best of this dish can be found in Indore. 

Believed to be originated from Indore, Bhuttekakees is a famous street food dish from Madhya Pradesh. It is minced corn cooked with spices and milk and embellished with fresh coconut. It is sour and sweet in taste and a great combination with tea as the evening snack. Mustard seeds and green chillies are further used to augment its taste. It is quite simple and easy to prepare. MawaBaati

MawaBaati is a sweet dish prepared with mava based dough, sugar syrup, cardamom powder and dry fruits. It is served mostly during festivals and special occasions. 

Mawabaati is a milk-solid-based sweet that looks and tastes somewhat like the famous Indian sweet gulab-jamun. It’s prepared mostly from milk solids, conventionally from Khoya, which is milk condensed that looks soft dough. It is mostly garnished with dried fruits like almonds and nuts to augment flavour. MawaBaati is prepared mostly during festivals, special ceremonies, or parties.

PalakPuri

As the name suggests palakpuri is basically poori made wheat dough mixed with grind spinach leaves. Puri is a deep-fried puffed-up Indian bread prepared with whole wheat flour. 

PalakPuri is quite fondly eaten as a breakfast meal and served mostly with potato curry and raita. To prepare the palakpuri, the palak is first cut and blanched and then pureed but water is not used. The puree is used to knead the dough (thus the bright green color of the puris) and then rolled into puris and deep fried. Along with being tasty, it’s quite healthy also. It is mostly served with chickpeas curry or potato curry.

PohaJalebi

 Pohajalebi is a favorite snack among people in Madhya Pradesh. It’s basically poha garnished with namkeen and served with crispy sweet jalebis (Indian sweet).

 Pohajalebi is mostly eaten during breakfast and is a staple food of Madhya Pradesh. Here tasty poha is served alongside sweet jalebi and served with tea. Poha is basically softly fried flakes of flattened rice that is prepared with onions, curry leaves, potatoes, peanuts and spices according to your taste. Jalebi is a sweet prepared with maida (refined wheat flour) that is deep-fried and then soaked in sugar syrup. The combination of poha and jalebi is heavenly in taste.
