Different types of soup recipes for healthy and scrumptious meals

It is time to ditch the conventional soup recipe and try these

Among the many food items that one does for maintaining a healthy eating lifestyle, it includes a meal of soup. Though soup is not the first choice considering the limited options, the tomato, vegetable, and other healthy soup recipes are different in taste than usual. So it is time to ditch the tomatoes and pick up options like lenticels and potato for a change. These options are not only full of nutrients. They are also a powerful source of good fat, minerals, vitamins, and carbohydrates. So here are a few options for you to try out at home.

Vegetarian Chili with Grains and Beans

For this, all you need is around half a kg of tomatoes that need to be diced, one tablespoon of chilli and coriander powder, two tablespoons of cumin, a few garlic cloves, one chopped onion, and carrot. One cup of overnight soaked black and kidney beans. If you do not have soaked beans, one can use canned beans, last for garnishing, salt, black pepper, cilantro, and lime wedges.

Begin by making gentle cuts across tomatoes and boil them till their skin starts to come apart. Please place them in ice water peel off the skin. Then, in a pan, place the peeled tomatoes, chilli powder, cumin, coriander, garlic, onion, carrot, and add water till all these ingredients are entirely submerged. Cook this on slow heat for a more extended period until the liquid starts to get thick due to tomatoes. Then add in both types of beans, salt, pepper, and cook until all mix well.

Potato soup

For this, all you need is one tablespoon of oil, one chopped onion, vegetable broth, half a cup sour cream, half a cup cheddar cheese, pepper, and chopped scallion greens. For the main ingredient, potatoes, grab half a kg of potatoes, then wash, peel and dice the potatoes.

To begin within a large pan, add oil, chopped onions, peas if you like, and fry them for a while. Till you see their colour change and keep stirring, it starts to soften. This won't take more than five minutes. Now add potatoes, broth and bring to a boil. Keep the pan on reduced heat till it starts to simmer. Now cook until the potatoes are tender. Once they become tender, transfer about half the potatoes to a bowl and mash until almost smooth. Pour this mashed bowl of potatoes into the pan. To this mixture, now add sour cream, cheese, and pepper. Cook and stir until all is combined and the cheese is melted. Garnish with cheese and chives.
