Poha Dhokla

Here's a quick and easy recipe to make spongy instant dhokla using poha! Start by combining 1 cup of curd and 1 cup of water in a bowl. Add ½ cup of roughly crushed poha, ½ cup of semolina, 1 tsp of green chilli paste, and salt to taste. Mix everything well, and set it aside for 10 minutes. Grease a 7-inch diameter thali and prepare the steamer. Just before steaming, mix 1 tsp of fruit salt and 2 tsp of water into the poha mixture. Once bubbles start to appear, give it a quick mix and pour the mixture into the thali. Steam for 10-12 minutes. While it's steaming, prepare the tempering by heating 1 tbsp of oil and adding ½ tsp of mustard seeds and a pinch of asafoetida. Pour the tempering over the dhoklas and let them cool. Once cooled, cut them into diamonds and serve! Enjoy your homemade dhoklas with a twist!

Then, grind the roasted poha along with 1 cup of sugar, a handful of crushed cashews, half a handful of pistachios, 2 cardamoms, and 2-3 tablespoons of grated coconut until you get a coarse powder. Next, add 8 to 9 tablespoons of melted ghee to the mixture and shape it into laddoos. Feel free to adjust the quantity of ghee based on the number of laddoos you want to make.
