Also known as Gur, jaggery is the Indian sweeter derived from unrefined sugar. A delicacy throughout the country, the secret to making the perfect crispy cookie is adding the right amount of fat to it. Also, keep a balance on the sift of jaggery powder to add texture to your cookie.

How long to bake the cookies-

The level of crispy depends on how you like it. Some like it is soft to bite amidst tea sips, and some like it like a cracker to dip in your teacup. If you are a fan of hard-baked cookies, bake them at 350 degrees F for 18 minutes. If you like them soft and crisp, bake them for lesser than 15 minutes.

How to store the cookies-

Let the cookies cool down completely while they are out of the oven. Once cooled, store them in an airtight container. They are good to go for three weeks. Once they turn soggy, you can bake them slightly to get the moisture out and have them baked.

Substitute for jaggery-

If you don't want to use jaggery, try brown sugar and coconut sugar. Refined sugar is a good substitute for crystal sugar and will help you burn the calories with an easy workout.

Method-

In a large bowl, mix whole wheat, baking powder, cardamom powder, cinnamon and salt. Whisk and set it aside.

Get another bowl and sift jaggery powder to get rid of large particles. Add ghee to the powder and whisk it till it's fluffy.

Add milk and keep mixing it.

Transfer the jaggery mix to the flour and mix it well.

Let the dough rest for 15 minutes.

Roll it and cut it into circles.

Transfer the cookies to a baking sheet lined with parchment paper and a pierce fork to make a design on top.

Bake it to 350 degrees F and keep it for 15 to 18 minutes.
